Spicy Grapefruit Guacamole
Ingredients
1 3/4 cups of grapefruit (about 2 grapefruit, cut into segments)
2 ripe avocados
2 tablespoons diced red onion
2 tablespoons chopped cilantro
1 teaspoon hot sauce (optional)
1/2 teaspoon salt

Makes 2 servings. 1 cup per serving.

Directions
  1. With a sharp knife, slice off ends of each grapefruit and cut rind off all the way around, using downward cutting motions. Trim off all remaining white pith.
     
  2. Hold grapefruit over a medium-sized bowl and, with a small paring knife, cut out grapefruit segments, being sure to capture all juice. Discard any seeds.
     
  3. Cut avocados in half, lengthwise; remove seeds and skin.
     
  4. Dice avocados and add to grapefruit, along with the diced red onion, chopped cilantro, hot sauce, and salt.
     
  5. Using the back side of a large fork, combine and mash ingredients together, being sure to leave some chunks of grapefruit and avocado.
     
  6. Store leftover guacamole in a sealed container in the refrigerator for up to 1 day.

    Variations

    Add diced jalapeños for a spicy kick.
