Chilled Cantaloupe Soup
Ingredients
1 cantaloupe (peeled, seeded, and cubed)
2 cups orange juice
1 tablespoon lime juice (fresh)
1/4 teaspoon cinnamon (ground)
Serving
Makes 6 servings. 3/4 cup per serving.
Time
60 minutes
Directions
  1. Wash cantaloupe skin with water. Peel, seed and cube.
     
  2. Blend cantaloupe and 1/2 cup orange juice in a blender or food processor.
     
  3. Stir in lime juice, cinnamon, and remaining orange juice.
     
  4. Cover, and refrigerate for at least one hour.
     
  5. Serve chilled.
